despite not feeling well (or maybe because of) i decided to cook tonight, and decided on chinese food. Hit on a recipe from “Chinese Food made Easy” by Ching-He Huang (from the BBC TV series), and adapted it a bit. welllll.. you know me, can never let a perfectly good recipe go to waste 😀

The recipe originally was “Stir Fried Vegetable Pancakes” – basically what it says on the tin, stir fried veg in those small pancakes that get served with crispy duck in chinese restuaurants. (I picked up 100 of them at the chinese supermarket last week, frozen, in packs of 10. handy. not too expensive either – around £3.00 if i remember right.) Its similar to this recipe on the BBC website, also by Ching-He. Her notes in the book say you can add meat if you like (so i did – a pork medallion cut into fine slices) then cooked according to the instructions. Didn’t much like the flavour once it was cooked, felt it needed a little more oomph, so added a teaspoon of sugar and a tablespoon’s worth of Oyster sauce (which isn’t veggie, but i think you can get veggie versions. Or if not, try plum sauce, or hoi sin sauce – I’m not sure if that is veggie or not).

Either way, it was good. oh so goood… do try!!
